Combine strawberries with 2 teaspoons of sugar and cook over medium heat 2-3 minutes, just until warmed through and sugar has melted.
Whisk mascarpone, vanilla and remaining sugar together.
Deep fry basil leaves for 10-15 seconds at 350 degrees just until crisp then drain on paper towels.
Serve mascarpone over warm strawberries and garnish with balsamic, basil and pistachios.
