Vegan Chopped Kale Salad

1 bunch
kale, chopped
2 cups
mushrooms, quartered
1/2 cup
craisins
1/3 cup
pecans, chopped
2 cloves
garlic, chopped
a dash
pepper
1/4 tsp
salt
2 tbsp
olive oil
juice
of 1 lemon
  1. Rinse and dry the kale. Remove the stems from the kale and discard. Chop the kale leaves into bite size pieces.

  2. Place chopped kale in a large mixing bowl. Add mushrooms, craisins, and pecans.

  3. In a blender, blend garlic, pepper, salt, oil, and lemon juice.

  4. Pour the dressing over the kale. Toss the kale until well coated. Wait a few minutes before serving to allow the kale to become tender.
