Rinse tilapia and pat dry with paper towels.
In a large skillet, over medium-high heat, add butter and shallots, cook for about 1 minute, until fragrant
Add garlic, tilapia, paprika, salt, pepper, stock, and lemon juice. Cook for about 2-3 minutes, until tilapia starts to become white and no longer opaque.
Reduce heat, flip fillets, and sprinkle with Parmesan and cilantro. Cook for about 2-3 minutes, until the fish is sold white, and flakes easily with a fork.
Plate and drizzle sauce over each fillet. If sauce is still very thin, increase the heat and cook for a few minutes longer, until the sauce reduces and thickens. Garnish with additional cilantro if desired.
