Preheat the oven to 350ºF.
In an oven safe pan, over medium heat, sauté onion and garlic in ghee, until the onion is tender and translucent, about 5 minutes.
Season the chicken with salt and pepper before adding it to the pan, meat side down. Allow it to brown on one side for about 5 minutes, then turn the chicken over and add broccoli florets and whole cherry tomatoes.
Place the pan in the oven to bake for 20-30 minutes, or until the chicken is cooked through.
