One ­Pot Paleo Chicken and Broccoli with Roasted Tomatoes

1/2 chopped
onion
2 crushed or chopped
garlic cloves
2 tbsp
ghee or butter
2 lb
chicken breast bone in and skin on
a dash
salt
a dash
pepper
1 medium
head of broccoli, florets
1/2 cup
cherry tomatoes
  1. Preheat the oven to 350ºF.

  2. In an oven­ safe pan, over medium heat, sauté onion and garlic in ghee, until the onion is tender and translucent, about 5 minutes.

  3. Season the chicken with salt and pepper before adding it to the pan, meat side down. Allow it to brown on one side for about 5 minutes, then turn the chicken over and add broccoli florets and whole cherry tomatoes.

  4. Place the pan in the oven to bake for 20­-30 minutes, or until the chicken is cooked through.
