North Shore Hot Pepper Bread

1 loaf
artisan bread (cut in half lengthwise)
1/2 cup
olive oil
1 stick
8 cloves
garlic minced
1 tbsp
chopped fresh rosemary
1/4 teaspoon
1/4 teaspoon
black pepper
6 cubano or chili peppers
cut into 24 strips and rubbed with olive oil
1 red pepper
cleaned, cut into 12 strips and rubbed with olive oil
1 onion
sliced and rubbed with olive oil
1 cup
pitted Greek olives
1 cup
shredded parmesan cheese
  1. Cut bread on an angle into 12 slices

  2. Melt the butter mixture ingredients in a small pan

  3. Remove from heat

  4. Place peppers and onions onto a sheet pan and place under broiler

  5. Cook for 2 minutes on each side until slightly browned

  6. Remove from heat

  7. Build the garlic bread before serving

  8. Top each slice of toast with butter mixture, 2 slices of cubano peppers, 1 slice of red pepper, a few onions, Greek olives, and top with parmesan cheese.

  9. Broil for one minute
