Lemony Smash Potatoes

1 tsp
olive oil
1 1/2 tsp
lemon juice
1/4 cup
fresh parsley
1 cup
sour cream
1 1/2 tsp
Sea salt and pepper

Remmi Smith: This is a great dish and it is unbelievably deeeeeeeeelicious! This is an Australian appetizer dish that I included in my new cookbook..GlobalCooking for Kids. It is very easy to make and I always have to double the recipe when I make it for my siblings because they LOVE this dish! Enjoy! Hugs and Veggies <3 Remmi.

  1. Boil potatoes in pan of water until tender and drain.

  2. On a large baking sheet, oil the pan with ½ Tsp of the olive oil.

  3. Place the potatoes on the baking sheet.

  4. Smash each potato with your hand until they slightly break open.

  5. Salt and pepper the potatoes.

  6. Bake in 450 degree oven for 25 minutes or until the potatoes are a bit crispy and golden.

  7. Remove potatoes from the oven and sprinkle with the parsley. Mix the chives with the sour cream and serve on the side.
