Preheat the oven to 350ºF. Trim unwanted fat from the chicken, and cut into 1-inch cubes.
In a medium-sized mixing bowl, whisk together vinegar, garlic, paprika, dill, salt, pepper, lemon herb seasoning, oil, and lemon juice.
Place the chicken in the bowl to marinate for at least 15-20 minutes.
Place a baking rack on a foil covered baking sheet. Evenly distribute the chicken over the baking rack. Alternately, if a baking rack in unavailable place the chicken directly onto the foil covered baking sheet, and blot accumulated drippings with a paper towel before serving. Place the baking sheet on the middle rack in the oven. Bake for 25-30 minutes, until the chicken is cooked through, and juices run clear when cut.
Plate the cooked chicken, add a few spoonfuls of tzatziki sauce next to the chicken for dipping. Add feta cheese over the chicken and cucumber on the side. Serve over wild rice if desired.
