Let steaks comes to room temperature on a cutting board, blot dry with a paper towel, and remove any excess fat.
Mix ground coffee, paprika, cayenne pepper, chili powder, brown sugar, salt, black pepper, coriander, and ginger until combined in a bowl.
Preheat oven to 400ºF and dredge steaks through the bowl of seasoning, until covered generously on every surface.
In a large skillet, over high heat, add olive oil and wait until the oil shimmers indicating it is hot. Sear each side of the steaks for about 30 seconds to 1 minute, without moving, until a brown crust forms on each side.
Remove skillet from burner, and place in oven for about 6-8 minutes to achieve meat cooked with a light pink center.
