Preheat the oven to 375ºF, line a baking sheet with foil, and spray with oil.
In a small bowl, combine the panko, adobo seasoning, and garlic. In a separate small bowl, whisk the egg white and milk slightly.
After removing the avocado pit, slice into 4-5 even wedge shape slices for each half of the avocado. With the help of a spoon, remove the skin by scooping the flesh out in one smooth motion.
Dip the avocado slices in the egg white mixture, then in the seasoned panko crumbs and place them on the prepared baking sheet and spray with oil. Bake for 25 minutes, and flip midway through cooking to achieve an even golden brown and crispy result.
While the avocado is baking, in a medium-sized mixing bowl, stir to combine the yogurt, lime juice, cilantro, scallions, salt and pepper to taste. Serve the avocado fries with the yogurt dip.
