Bacon Bleu Sliders with Pesto Mayo

1 lb
Ground Beef
1/4 tsp
Ground black pepper
2 pieces
Bacon strips, cut in half to yield 4 pieces
Fresh Arugula
Pesto Mayo (see Recipe page)

Chef Sandra’s TIPS:  
  • Use a toothpick to keep all ingredients together and have fun get themed toothpicks or brand them your own
  • Use different cheese for other flavors, but always shred it for faster and more even melting
  • Have fun with flavors and create other flavored mayo’s by adding Dijon to mayo or Garlic or Fresh Herbs with Citrus
  1. Prepare a griddle or fry pan medium-high heat. Get ready to put on burger patty, and have butter ready

  2. Cook off your bacon slices to be crispy - set aside

  3. Add the beef, egg, salt and pepper to a medium bowl and mix to combine.

  4. Divide the beef into equal portions, then form each portion into a patty a little larger in diameter than the buns and stuff inside with one cube of butter - be sure butter is enclosed in patty without openings

  5. Cook the patties for 3 - 5 minutes and do not over crowd pan will drop temperature and take longer for all to cook evenly. Flip with a spatula, add cheese to each and cook until the cheese melts and the burgers are cooked to medium, 3 to 5 minutes more.

  6. Buns get a fast pan grill and then are spread with Pesto Mayo (generously) and then assemble your sliders - bun, pesto mayo, burger patty with bleu cheese arugula, bacon dollop of Pesto Mayo and top with bun.
