Apple Cider and Ginger Cocktail


1 cup
light brown sugar
1 cup
filtered water
6-8 inch piece
baby ginger, roughly chopped
2 tsp
fresh grated ginger
2 tsp
ground ginger
2 tsp
black peppercorn
2 tbsp
1 tbsp
dark brown sugar
1 orange
sliced and cut into a wedge for the rim
4 oz
club soda
6 oz
apple cider
4 oz
1 oz
fresh squeezed lemon juice
2 sprigs
fresh rosemary
  1. In a small saucepan, combine light brown sugar, water, roughly chopped baby ginger, grated ginger, powdered ginger, and peppercorns. Bring the mixture to a boil, being careful not to let it bubble over.

  2. Turn down the heat to low and simmer/steep for 5 minutes. Remove from the heat and allow to cool to room temperature.

  3. Filter by pouring through a fine mesh strainer. Store covered in the refrigerator until needed.

  4. Combine cinnamon and dark brown sugar together on a plate

  5. Run an orange wedge around the rim of your cocktail glass. Set the rim of the glass in the cinnamon and brown sugar mixture, and slightly swirl, until the mixture sticks to the glass rim.

  6. Fill the glass with ice and the club soda.

  7. In a shaker full of ice, add the cider, bourbon, 1/2 cup simple syrup made earlier, and lemon juice. Stir and pour into a cocktail glass.

  8. Garnish with a slice of orange and a sprig of rosemary.
