Warm Strawberries with Mascarpone and Basil

1 pint
strawberries, stemmed and quartered
1/2 cup
mascarpone cheese
6
basil leaves
2 tbsp
chopped pistachios
1 tsp
aged balsamic vinegar
1 tbsp
sugar
1/2 tsp
vanilla extract
  1. Combine strawberries with 2 teaspoons of sugar and cook over medium heat 2-3 minutes, just until warmed through and sugar has melted.

  2. Whisk mascarpone, vanilla and remaining sugar together.

  3. Deep fry basil leaves for 10-15 seconds at 350 degrees just until crisp then drain on paper towels.

  4. Serve mascarpone over warm strawberries and garnish with balsamic, basil and pistachios.
