Totally Tropical Broccoli & Pineapple Salad with Awesome Avocado Mayonnaise

1 large
broccoli, finely chopped (for salad)
1 large
pineapple, diced (for salad)
1 cup
cranberries (for salad)
4-6 cloves
garlic, peeled and finely chopped (for salad)
2
apples, chopped (for salad)
1 jar (approx. 3 cups)
Awesome Avocado Mayonnaise
2 large ripe avocados (diced)
ripe avocados, diced (for mayonnaise)
1⁄4 cup
extra virgin olive oil (for mayonnaise)
1 1⁄2 tbsp
fresh lemon juice (for mayonnaise)
1 tsp
apple cider vinegar (for mayonnaise)
1⁄4 tsp
garlic powder (for mayonnaise)
Pinch
fine Himalayan salt (for mayonnaise)

With it’s fun and refreshing flavors, including juicy pineapple, the salty crunch of broccoli and the creamy yet subtle Avocado, this recipe is sure to become a family favorite.

  1. To make the avocado mayonnaise, add the avocado, olive oil, apple
    cider vinegar, salt, garlic powder and lemon juice to a blender then bend
    for 1 minute. Transfer to a mason jar and store in fridge until ready to use.

  2. To make the salad, place half the garlic, one cup of broccoli and a 1⁄4 of
    the pineapple chunks into a blender. Blend on full power for 45 seconds.

  3. Add the mixture to a large bowl and then stir in the remaining broccoli,
    garlic, and pineapple. Add the cranberries and mix until fully combined. Thenadd the full jar of Awesome Avocado Mayonnaise stirring until fully mixed. Serve with a smile in the sunshine!
