Sweet Pea Guacamole

1 16 oz.
bag of frozen peas
3
firm Roma tomatoes, diced
1 bunch
cilantro, minced
1
jalapeño pepper, minced
1
shallot, diced
2 cloves
garlic, minced
Juice of one lime
Pinch of roasted cumin

This recipe is much lower in fat and higher in fiber than traditional guacamole

  1. In a food processor fitted with the “S” blade, process peas until smooth.

  2. Transfer to a larger bowl.

  3. Stir in remaining ingredients by hand. Chill.
