Sweet and Spicy Roasted Potatoes

purple potatoes, peeled and cut into 1 inch cubes
2
sweet potatoes, peeled and cut into 1 inch cubes
1/2 cup
dates, pitted and chopped
2 tbsp
olive oil
1/4 tsp
crushed chili peppers
1/4 tsp
cinnamon
1/4 tsp
nutmeg
a dash
salt
a dash
black pepper
1/2 cup
chopped almonds
  1. Preheat oven to 400ºF and prepare a foil covered baking sheet.

  2. In a large mixing bowl, toss potatoes and dates in oil with chili pepper, cinnamon, nutmeg, salt, and black pepper.

  3. Evenly distribute potato mixture on baking sheet. Bake for 20-30 minutes, until the potatoes are fork tender. Toss vegetables midway through cooking.

  4. About 5 minutes before taking the potatoes out of the oven, sprinkle almonds over the top, and return to oven to lightly toast almonds.
