Slow Cooker Indian Butter Chicken

1 lb
chicken thighs, cut into small chunks
8 oz can
crushed tomatoes
1/4 cup
white onion, diced
5 cloves
garlic, minced
1 tbsp
ginger roots, peeled and minced
1/2
juice of lemon
1/2 tbsp
garam masala
1/2 tbsp
chili powder
1 tsp
cumin
1/2 tbsp
fenugreek
1/8 tsp
cayenne pepper
1
bay leaf
1 cup
half and half
1/4 cup
plain greek yogurt
a dash
cilantro, chopped for garnish
  1. Remove any unwanted fat from the chicken and cut the chicken into small uniform pieces.

  2. To the slow cooker, add the chopped chicken, tomatoes, onion, garlic, ginger, lemon juice, garam masala, chili powder, cumin, fenugreek, cayenne pepper, and bay leaf.

  3. Secure the lid, set to high and cook for 3-4 hours, or until the chicken is cooked through.

  4. Before serving add half and half and yogurt, stir to combine and let cook for about 5 minutes longer, until the sauce is warmed through.

  5. Garnish with cilantro and serve over rice.
