One Pot Sausage and Peppers Penne

olive oil

Italian sausage, thawed and sliced
1/2 diced
onion
2 chopped
garlic cloves
2 cups
chicken broth
10 oz
tomatoes and green chilis
1/2 cup
milk
8 oz
penne pasta whole wheat
4 oz
peppadew
1/2 tsp
salt
2 cups
kale chopped
1 cup
pepper jack cheese, shredded
1/2 cup
scallions, chopped
  1. In a large, oven-safe skillet, over medium-high heat, add oil, sausage and onion. Cook until the sausage is lightly browned and the onion is tender, about 5-6 minutes. Add garlic and cook until fragrant, about 1 minute.

  2. Add broth, tomatoes and green chilis, milk, pasta, peppadew, salt and pepper to taste, and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until the pasta is tender, about 15 minutes.

  3. Stir in kale cook for about 2 minutes, until wilted.

  4. Remove the skillet from the heat, stir in the cheese, sprinkle with scallions, and serve.
