Lemony Rice with Raisins

1 tsp
olive oil
1/2 cup
onion, diced
1/4 cup
celery, chopped
2 cups
rice
4 cup
chicken broth
1 tsp
lemon juice
1/2 tsp
tumeric
1/4 tsp
cinnamon
salt and pepper
3/4 cup
raisins
2 tsp
fresh parsley

Remmi: Rice is one of my all time favs. I am always happy when there is leftover rice as I love it as an after school snack. Also another secret of mine is to serve rice with a side of plain yogurt. It adds a creamy touch to rice dishes! Tumeric has a reallysubtle flavor but more importantly, it adds great color to the dish. The raisins bringa nice sweetness to this dish. YUM!

  1. Prepare ingredients as directed.

  2. In medium pan sauté the onion and celery in the olive oil for 2 minutes.

  3. Add remaining ingredients except for the raisins.

  4. Bring rice to a boil and place on lid and reduce heat to low for 20 minutes.

  5. When rice is done cooking, fluff the rice with a fork and stir in the raisins. Sprinkle the rice with parsley and serve.
