Lemon Herb Spiced Chicken

1 lb
chicken breast, thawed and cubed
2 tsp
balsamic vinegar
2 cloves
garlic, minced
1 tsp
paprika
1 tsp
dill weed
1/8 tsp
salt
a dash
pepper
1/2 tsp
lemon herb seasoning
2 tsp
olive oil
1/2 portion
juiced lemon
4 oz
tzatziki sauce
4 oz
crumbled feta cheese

cucumber, thinly sliced
  1. Preheat the oven to 350ºF. Trim unwanted fat from the chicken, and cut into 1-inch cubes.

  2. In a medium-sized mixing bowl, whisk together vinegar, garlic, paprika, dill, salt, pepper, lemon herb seasoning, oil, and lemon juice.

  3. Place the chicken in the bowl to marinate for at least 15-20 minutes.

  4. Place a baking rack on a foil covered baking sheet. Evenly distribute the chicken over the baking rack. Alternately, if a baking rack in unavailable place the chicken directly onto the foil covered baking sheet, and blot accumulated drippings with a paper towel before serving. Place the baking sheet on the middle rack in the oven. Bake for 25-30 minutes, until the chicken is cooked through, and juices run clear when cut.

  5. Plate the cooked chicken, add a few spoonfuls of tzatziki sauce next to the chicken for dipping. Add feta cheese over the chicken and cucumber on the side. Serve over wild rice if desired.
