Homemade Pizza Dough

306 grams
flour or bread flour
306 grams
all-purpose flour
20 grams
kosher salt
8 grams
extra-virgin olive oil

Metric kitchen scale needed

Use a kitchen scale and measure out the ingredients. It needs to be calculated in grams to be correct. In baking, measuring in extremely important.

  1. In the mixer bowl, stir together 400 grams (about 1 cup) lukewarm tap water, then add exactly 4 grams yeast.

  2. Stir water and yeast until cloudy.

  3. Add 20 grams salt.

  4. Add 8 grams olive oil.

  5. Now 306 grams of bread flour, then 306 grams of all purpose flour.

  6. Put mixture into mixer with dough hook.

  7. With dough hook, knead dough for 3 minutes. Until combined. Turn onto a flour surface and knead for additional 3 minutes.

  8. Put the dough ball on the counter top (use flour on counter if absolutely necessary) and knead the ball back and forth.

  9. Cut into 2 equal pieces and then cut the 2 balls into 4 balls. Then roll each into a small ball.

  10. Place on a sheet pan surface, cover with dampened cloth, and let rest and rise for 3 to 4 hours at room temperature or for 8 to 24 hours in the refrigerator (If you refrigerate the dough, remove it 30 to 45 minutes before you begin to shape it for pizza).

  11. To make pizza, place each dough ball on a heavily floured surface and use your fingers to stretch it, then your hands to shape it into rounds or squares. Top and bake.There is an entire new video to show you how to assemble the pizza.
