Garlic Braised Kale

olive oil

yellow onion, thinly sliced
a dash
kosher salt
a dash
pepper
6 cloves
garlic, minced
1 bunch
kale, stemmed and chopped into large pieces
1 2/3 cups
vegetable broth
1 tbsp
red wine vinegar
  1. Heat oil in a large skillet over medium-high heat. Add the onions, salt, and pepper. Stir-fry for 2-3 minutes, until onions are translucent.

  2. Add the garlic, kale, and broth. Cook, stirring occasionally, for 8-10 minutes; add a splash of vinegar in the last minute of cooking. Remove from the heat. Serve immediately.
