Creamy Mashed Potatoes

1/2 tsp
kosher salt
2 lbs
yukon gold potatoes cut into large cubes
1/2 cup
milk
8 oz
sour cream
2 tbsp
butter at room temperature
1 tbsp
chopped chives
a dash
pepper
1/2 cup
shredded cheddar cheese
1/2 tsp
granulated garlic
  1. Bring a large pot of water to boil; add salt and cubed potatoes. Let boil for about 15 minutes until potatoes are very tender.

  2. Drain potatoes in a colander, then add back to empty pot. Add milk, sour cream, and butter, and mash to desired consistency—either smooth and creamy or with some lumps.

  3. Stir in chives, salt, pepper, cheese, and garlic. Serve in a family-style bowl.
