Ceviche

1 cup
fresh shrimp, shelled and tails removed
1 cup
silver snapper, cut into chunks

key limes, freshly pressed

lemon, freshly pressed

red or white onion, finely chopped
1/2
orange pepper, finely chopped
1/2
yellow pepper, finely chopped
to taste
cilantro, finely chopped
to taste
salt & pepper

This makes a really great appetizer! Serve with some refreshing white or rosé wine and let the zesty flavors do all the talking!

  1. Place the silver snapper and shrimp in a large mixing bowl. Add the juice of the lemon and limes and place the bowl in the fridge for an hour. The acid in the lemon and limes will cook the fish. You can also add a dash of rose or white wine.

  2. After an hour take the snapper out the fridge and add the onion, salt & pepper, to infuse flavor while cooking. Then add the orange and yellow peppers and the cilantro to add a little extra zest to the flavor.

  3. To make it super tropical, right at the very last minute add a couple of slices of grapefruit to make it zing! Serve with a few slices of limes on the side and a sprinkle of cilantro.
