Beet Salad with Apples and Simple Vinaigrette

Beets
5 cups
Romaine lettuce
1 apple
Large, diced
1/4 cup
Sweet onion
1/4 cup
Parmesan
3 tsp
Light oil
2 tsp
White vinegar
2 tsp
Fresh parsley

Chef's Note: If you have never tried beets you are missing out on a great flavor and the deep colors of beets like orange and purples (my fav color) brings beauty to any dish. I like beets as a side dish but when you combine it with other veggies and fruits in a salad its really the best! I also like to use a simple vinaigrette especially on more complex salads like this one with different and interesting flavor combinations. Also when it comes to dressing salads less is better than more. Dressings are for enhancing flavors and not drowning them…use just what you need!

  1. Wash beets and trim the top and bottom of stems(do not peel entire beet).

  2. Place beets in a foil packet drizzled with 1 T of olive oil and salt and pepper to taste.

  3. Place in 375 degree oven for 45 minutes. Remove from oven and slice into medium wedges.

  4. Prepare the remaining salad ingredients as directed.

  5. On a large platter, layer the salad ingredients on the base of lettuces starting with the beets.

  6. Prepare the vinaigrette and drizzle on salad just before serving.
